If summer is synonymous with ice cream, then the rainy season is all about hot soups. There’s nothing more satisfying than slurping warm broth on a cold and rainy days.

Chicken Binakol

Chicken Binakol is a delicious chicken soup dish. It is similar to Chicken Tinola, although the use of of coconut meat and coconut water makes this dish unique.

Traditional methods of cooking Chicken Binakol requires native chicken simmered for several hours. The meat of native chicken is tougher than regular dressed chicken, but it has more flavor. Simmering native chicken longer makes the meat tender and releases all the flavors.

Kanse Recipe is an Ilonggo recipe that is sort of like a cross between Bulalo (beef bone marrow and vegetables soup) and Sinigang (sour pork soup). Kansi is one of the finest delicacies of Bacolod City, it is Ilonggo’s version of the famous Bulalo.

Nilagang Baboy or Pork Nilaga is translated as boiled pork in Filipino. This is a soup dish commonly served for lunch or dinner on regular days. Nilagang Baboy is eaten with steamed white rice and is best served with patis (fish sauce) and siling labuyo (birds eye chili).

Pancit Molo

Said to have originated from the town of Molo in the province of Iloilo and influenced by the wonton soups brought in by the large community of Chinese settlers in the area, pancit molo is a soup dish made of meat-filled dumplings, shredded chicken and a robust broth. The piping-hot soup is ladled into serving bowls, and garnished with green onions and fried garlic bits for another layer of flavor.

La Paz Batchoy

Batchoy is a soup dish composed of sliced pork, pig’s innards, and miki noodles.This dish originated from the district of La Paz in Iloilo City — in the island of Panay. Throughout the years, batchoy gained popularity and has been a favorite soup dish along with beef mami, beef pares, and bulalo.The miki noodles used in this recipe refers to fresh egg noodles. This type of noodle is often used in soup dishes. Since the noodles are fresh, it requires minimal cooking time. Sometimes, pouring hot broth over the noodles is enough to cook it.
